"The_ NV Solera Methode Ancestrale Rancho Tepusquet Chardonnay is our offering of bubbles from the Bien Nacido Vineyard & Rancho Vinedo Vineyard in Santa Maria Valley.
We picked the chardonnay at around 18 brix, the wine then undergoes native fermentation with no additions.
During the fermentation the 2020 wine was blended with chardonnay from 2014, 2015, 2016, 2017, 2018, & 2019 aging together in 500 L barrels, once blended the wine is bottled just before it finished.
Once in bottle and with the primary fermentation complete the wine is hand riddled, disgorged and corked and caged.
11.75% alc, 3.27 pH, 8.64 g/L TA, FSO2<4
