A deeply romantic and textured sauvignon blanc. the 2016 is drinking amazingly well right now with a refreshing acidity but layered textural elements that sing on the palate. This wine was fermented and aged entirely in old oak barriques to allow for slow microxidation and increased contact with the lees, however, it was not stirred in it's elevage to retain natural SO2.
This is an incredible wine and I highly recommend jumping on it as it is end of vintage!!!

While husband Emmanuel manages the vineyards, the real star is his wife Karen, who makes the wine and also works as the head winemaker and manager of another (very famous) Languedoc winery, Prieuré de Saint Jean de Bébian. Serious girl boss!
