Despite the name, it’s not really associated with Burgundy today; its modern identity is tied to the cool, maritime vineyards around Nantes and to wines built around freshness, lees, and salt.\u003c\/p\u003e\u003cp\u003eIn the vineyard and cellar, Melon is relatively neutral, which is part of its strength. It doesn’t dominate with obvious fruit, so soil, climate, and winemaking details show clearly. Aging sur lie is especially important in classic Muscadet, adding texture and a subtle bread-dough or savory quality without making the wines feel heavy.\u003c\/p\u003e\u003cp\u003eIn the glass, Melon de Bourgogne is usually lean, dry, citrusy, and mineral, with notes of lemon, green apple, white flowers, oyster shell, and sea spray.
