Vesuvius. it is built for heat - thick skins, smaller berries - and helps to give this wine some nerve and backbone. as people who tend to drink more white than red, we’ve always been a bit disheartened by the fact that Paso is primarily a red wine region. we’re excited to showcase an alternative take on the region.
artwork by Jennelle Lynn. shop this specific print here

Notes on the Producer

We launched ídola wine co in 2023 with the intention of cultivating awareness in our day to day lives. We treat wine as a meditation - from grape to glass - and believe in its power to communicate the complexities of Nature.
Our fruit is processed in a minimal-intervention style that respects the subtleties of each vintage and honestly captures terroir in a glass. Consuming, and now producing, these types of wines encourages us to look beyond the bottle and reflect on where we fit into a bigger picture. There is beauty in knowing that every interpretation will be unique.
We invite you to meditate on a glass of ídola, appreciating its unique sensibility each time you open a bottle. It’s one of the most versatile white grapes in the world, capable of dry, off-dry, sparkling, and sweet wines with real longevity.

In the vineyard, Chenin buds early and ripens late enough that site and season matter. It keeps acidity naturally well, which is a major part of its usefulness across styles. In the right conditions, it can also develop noble rot, making some of the world’s great sweet wines without losing freshness.

In the glass, Chenin can show apple, pear, quince, citrus, honey, wool, lanolin, chamomile, and a stony, savory edge. The best dry versions have tension and texture at the same time; the sweeter versions can be rich without feeling heavy. Chenin is one of those grapes that can look simple on paper but becomes deeply expressive in the hands of thoughtful growers.

Vermentino

Vermentino is a Mediterranean white grape, especially important in Sardinia, Liguria, Corsica, and parts of southern France where it’s often called Rolle. It’s one of those varieties that feels naturally suited to coastal food and warm-weather drinking: aromatic enough to be expressive, but usually driven by freshness rather than perfume alone.

In the vineyard, Vermentino handles sun and maritime influence well, and it can keep useful acidity even in warm climates. It often does best when picked before it gets too broad, preserving the salty, citrusy, herbal side that gives the wines their lift.

In the glass, Vermentino often shows lemon, lime, green apple, pear, almond, wild herbs, and a saline or sea-spray quality. The best versions are crisp and textured at the same time, with enough phenolic grip to make them feel like real food wines rather than just simple aperitifs.

//cdn.shopify.com/s/files/1/0403/3655/6193/files/aDi2oa9jMPbPjjQ-IpPl_2e7E7J-ZcbG_SSHIxA9-5k.jpg?v=1783704557
https://satellitesb.com/products/dola-wine-co-a-la-riviera-chenin-blanc-vermentino-fiano-paso-robles-ca-2024
