James performed two sperate fermentations in 2019. One fermentation whole cluster and the other destemmed. The whole cluster fermentation showed pronounced spice character and tannin, while the destemmed showed notably more fruit and Grenache varietal character. The two were blended for bottling. For this vineyard, he prefers the destemmed portion largely because of the variety distinction. Unfined & unfiltered with no additives or sulfites used during vinification. 14ppm SO2 added at bottling.

Some of the vineyards we are farming ourselves using organic practices, and dry farming management. To supplement we source fruit from organically and sustainably farmed vineyards. We work to stay as local as possible to the Santa Cruz area.
We follow through with astute craftsmanship utilizing native yeasts, eschewing additives, racking well but never filtering, a carefully monitored élevage without sulfur and sur lie, and bottling with minimal effective sulfur or less.
