Our first ever pét-nat cider! We've been dreaming of making cider for years and are so excited to share this new release with you. We started planting apple trees around the vineyard in 2018 using heirloom cider varietals with names like Black Twig, Ashmeads Kernal, Spitzenburg and Northern Spy. Today we've got about 15 different apple varieties growing on the farm and even some pear trees. 2020 was our first small apple harvest and we created a blend of estate apples with an organic practicing orchard in Paso. We pressed about a ton of apples into barrels and then blended it with our Viognier from the Serena San Marcos Vineyard.
70% apples blended with 30% Viognier and bottled with fresh organic Grenache juice to produce fizz. 9% ALC, unfiltered, no sulfites added. The result is an incredibly delicious bubbly and totally dry pét-nat wine/cider hybrid. It's slightly hazy in the glass with aromas of jasmine, fresh peaches and crisp green pear. It's medium bodied with just enough tart green apple flavors to make it a perfect summer time beach blanket pounder.
