Domaine du Temps - 'Sans Ordonnance' - Rosé of Cabernet Sauvignon, Merlot - Languedoc, FR - 2021

Domaine Du Temps Sans Ordonnance Rosé is a captivating blend of organic Cabernet Sauvignon and Merlot, offering a distinct expression of southern French winemaking. This rosé is crafted using the saignée method, where the juice is bled off the fermentations of these two noble grapes. Embracing natural winemaking techniques, the wine undergoes native yeast fermentation and is bottled unfined, unfiltered, and with no added sulfur dioxide.

*note - this is not a "leave it in the fridge overnight after opening, see ya next week" kind of wine! It is pure nature and loves to be partied with and guzzled in about an hour or two! It is delicate & will go sideways if left out exposed to the air! *

The domaine is about 12 Ha of grappes lost in the garrigue. We are using Biodynamie and we let our animals free in the area. Our wines are naturally made, no chemicals but a lot of love.
