This wine is grown by Ross Cannard, at Benguerel Family Vineyard on Los Robles series gravelly clay loam. 50% was foot-trod and macerated for several hours before all being pressed together. It went to tank for fermentation, then finished dry in neutral French oak barrels. The 4 month élevage included lees stirring and 100% Malolactic fermentation. An absence of cold stabilization, fining, or filtration, will yield some harmless solids at the bottom of the bottle. No additives except for 30 ppm SO2 just prior to bottling.
YEE MOTHER EFFING HAW! This wine is so tight, both literally and figuratively. A summer delight.
Vineyard Practices
Regenerative grape farming is of paramount importance to the Fresh Wine Company. We work with grape farmers dedicated to changing the agricultural paradigm in Sonoma Valley, hoping to heal the earth and the community. These farmers have transitioned several properties from conventional strip spraying to regenerative and sustainable practices. Working without synthetic pesticides, conserving groundwater, and improving soil tilth to sequester carbon and protect waterways are practices central to the Fresh Wine Company's mission.
Winemaking Practices
FRES.CO wine is made with minimal additives and maximum transparency. The aim is to make fresh tasting wine, support our community, and drawdown carbon emissions. To accomplish this we work with neighbors, minimize waste, and emphasize sustainable agriculture. In the cellar, we make wine without commercial inputs. Generally we add only a small dose of SO2 (generally 30 ppm, solely at bottling). We ferment with native yeast and neutral barrels, and use both scientific and ancient techniques to eliminate additions. FRES.CO's goal is to produce natural wines that are delicious and true to site while using progressive business practices to incentivize positive change.
