Region: Tuscany Denomination: DOC Maremma Toscana Vermentino Bottles: 11.000 Grapes variety: 85% Vermentino and 15% Grechetto Alcohol content: 13.5% VOL Available format: 0.75 L Aging: 5 months in steel vats Winemaking The grapes are harvested by hand, selected, destemmed then immediately chilled to a temperature of 6°C. They are then brought to the press where they are left for 12 hours in cold pellicular maceration. The must is left to decant for a further 48 hours at 4°C, after which it is allowed to ferment at a temperature of 16-17°C. Following stabilization, bottling occurs about 5 months after the harvest.
Tasting notes
Brilliant yellow with light golden reflexes. Aromas of citruses, apple, pear and exotic fruits. In the lightly herbaceous, mineral and slightly salty character one can perceive the helping hand of the Grechetto. The taste is harmonious and fresh and its acidity perfectly balanced with fullness and roundness of taste. The minerality is remarkable and typical of the sandy Mediterranean terrain that is home of this wine. Perfect with fish and sea food.

Our vineyard
Our 15 hectare vineyard is located in the heart of Maremma and we produce approximately 100.000 bottles per year. For us the story of how a wine is made is as important as the wine itself and we believe that winegrowing begins with the care of the soil. Since 2004 we have been practicing organic viticulture and we have been certified organic since 2015. Our approach is to tap into the rhythms of nature to embrace biodiversity and encourage natural processes in order to grow healthy grapes that help craft expressive, vibrant and living wines.
