Tasting notes — Fresh strawberry and cool mint on the nose. A rhubarb loaf laced with fried sage and sea salt. Herbal, crisp, fruity, and mineral. The texture is playful and crunchy.
Vinification — Alban clone Grenache was picked on October 1, 2021. Gently destemmed to leave a majority of the whole berries intact created a longer, slower native fermentation that I think added a crackle to the palate. Pressed and aged in nuetral French oak barriques for 10 months. Racked off the lees once in the Spring, bottled unfined and unfiltered in July 2022.

Say When is made up of husband and wife team Rachel and Michel. Working with small family farms from Santa Barbara County to Paso Robles allows them to source a wide range of varietals and that continues to challenge and push their winemaking in new directions. From Piquette and carbonic fermentation to classic California Pinot Noir, each wine is given a unique identity to reflect the personality within the bottle. Between harvests you'll find Rachel and Michel in Los Angeles, where they balance their lives between the city and the winery.
