All the great intense cherry of the rosado, just more! It's got this great undertone of layered fruit and classic pinot noir sexy decay that I love.
6 months all neutral oak, natural ferment, un-fined, un-filtered, and generally not messed with!
Wine to be enjoyed with FOOD & FRIENDS. Maybe with a light snack: a toast point smeared with fig compote and goat cheese and topped with a balsamic drizzle…or a late summer tomato bruschetta with fresh basil and the best EVOO, or perhaps some gooey Fromager d'Affinois and a baguette.. or maybe some white bean hummus, olive tapenade, fresh parsley, feta and pita chips. I’d SAY YES to a summer melon and mozzarella salad topped with a fresh Mint Vinaigrette. Or some Prosciutto or Salami, or both. Or just a fat slice of MANCHEGO! But probably my favorite some portuguese sardines and saltine crackers…,simple, on a Cliff at sunset in Big Sur with a bottle of Amiga.
