Varieties: Chenin Blanc, Grolleau
Terroir: Chenin Blanc - Southeastern exposure, light, well-draining Turonian chalk soils with resurfacing limestone, yielding extremely low pH levels. Grolleau - Eastern exposure, heavier clay-rich marl-based soils.
Viticulture: Purchased grapes from two organic producers
Vinification (Crémant): Whole cluster pressing at low pressure (to avoid astringency while maintaining acidity), separation of first press and end-of-press must, indigenous yeasts, no malo, aging in stainless steel tank, bottling in spring, aging on lattes for 30 months, low dosage.

Size: Started as micro-négoce with a first bottling of crémant Physis 2017. In 2015, Etienne was gifted 1.4 ha (3.46 ac) of Cabernet Franc in "Clos Durandière" as a wedding present. Additional parcels will be added in the near future.
