Notes from the Winery/Importer
Grape Variety: 100% Chardonnay Production: 2,080 bottles — Appellation: Saint-Véran (Burgundy Cru)
In the Vineyard
This cuvée comes from one of the most renowned climats in the Saint-Véran appellation: Mont Saint-Pierre, overlooking the village of Chasselas. Its clay-limestone soils give the wine both volume and a refined minerality.
In the Cellar
Fermented at low temperatures in 400-liter barrels that have held five previous wines. This approach avoids masking the wine’s fruit character with oak. Aged for 12 months in barrel.
In the Glass
A generous, aromatic Chardonnay with a mineral finish.
Tasting Tip: Best enjoyed while meditating on Canopée by Polo & Pan.
Notes on the Producer
LES SAUVAGES
A mixed bunch: an agronomist turned winemaker, a schoolgirl no taller than three apples high, a musician who found new rhythm in local food systems, and a newborn just arriving as the adventure begins…
Le Clos Sauvage is, above all, the story of a young family seeking to reconnect with the land through a hands-on, artisanal approach to farming—where human, ecological, and agricultural values come together.
Our project is the result of endless reflection—shaped by encounters, wine-fueled evenings, our professional journeys, and deep personal convictions. After a year wandering through the vineyards of France, we were lucky enough to find a place that truly fit our vision.
And here we are, right on the border of Burgundy and Beaujolais.
We’re perched atop a hill at 450 meters elevation, with sweeping views over the Saône Valley—Mont Blanc to the east, the Bois de Leynes to the north, and the Roche de Solutré to the west. The stage is set.
The Clos is surrounded by chestnut forests, dry-stone walls, natural springs, and wild heathland.
We feel incredibly fortunate to farm this preserved, natural place—an ideal setting for practicing organic agriculture.
Why “Le Clos Sauvage”?
When we arrived, the old vines of the Clos had been left untended, in a truly wild state… Today, we’re carefully reclaiming and cultivating 4 hectares, and gradually replanting small islands of vines to best express the unique character of our climats through our wines.
And speaking of terroir—ours is a mix of granitic soils lightly dusted with clay-limestone, elevated at around 400 to 450 meters. The result? Wines marked by freshness and a vivid, mineral energy.
