Jeanne Piollot is the daughter of two amazing Champagne winemakers : Roland Piollot and Dominique Moreau. In 2017, she took over a winery in the neighboring Chatillonais, a Northern Burgundy region. Her 2.3 hectare domaine, named Dame Jeanne or “Lady Jeanne”, is composed of Chardonnay, Pinot Noir and Gamay vines which lie in the clay, limestone and red marl soils of the Châtillonnais region. Jeanne is working her vines organically, Guyot trained and by hand. In the cellar, native yeast fermentation takes place in neutral Burgundy barrique for the still wines and in stainless steel tank for the sparkling wines. The wines are unfined, unfiltered and with nothing added to them. The sparkling wines are aged for 2 years sur lattes before disgorgement and do not receive dosage.
