Request a Case Order"La Bulle de l'Ouest" is a naturally crafted wine, aspiring to be an enjoyable, sociable, and celebratory drink. It exhibits a well-balanced profile with elegant bubbles. The intense nose is primarily characterized by fresh grape juice aromas. On the palate, ripe fruit notes are prominent while maintaining a sense of freshness.
Vineyard: "La Bulle de l'Ouest" comes from vineyards with shallow sand-silt soils, seated on amphibolite. This unique terroir imparts fruity and approachable qualities to the wines.
Vinification: The winemaking process involves a manual harvest with 10-15 kg baskets, followed by gentle pressing and slight settling before initiating fermentation in tanks, reaching up to 8% alcohol by volume. The fermentation begins spontaneously without the use of external yeast or enzymes and occurs slowly at a low temperature (18-20°C). Cold stabilization, filtration, and bottling occur before the fermentation resumes in the bottle. Approximately 17g of residual sugar (equivalent to 1% alcohol) is used to create the sparkling effect. Disgorgement takes place 2 to 3 months later. The "Méthode Ancestrale" aims to utilize natural sugars for fermentation, the sparkling process, and residual sweetness.
Food Pairing: With deliberately low alcohol content, this wine is perfect for sharing with family and friends during dinner or simply for casual enjoyment.
