A textured and bright skin ferment Albariño with notes of citrus and stone fruit and a slight salinity and herbaceousness to round it out. The nose shows sea spray, orange peel, dried peach, apricot, thyme, sweet basil, and fresh mango. Palate is textured with bright, refreshing acidity and notes of mango and banana chips, apricot and a hint of sweet basil. Fruit was harvested and destemmed, then fermented in a stainless steel tank with skins and no cold soak. The wine was allowed to ferment at 75 degrees and was pumped over twice daily during fermentation. No punchdowns were used during fermentation. Once brix were negative the wine was pressed and racked to a stainless steel tank to allow to finish malolactic fermentation. The wine is bottled unfiltered. Liwa is the Miwok name for water, and these thirst-quenching wines are made in collaboration with our friends at Inizi for everyday drinking. All farming is organic and the only addition to the wine at any point is sulphur dioxide. A portion of the proceeds will go to the Native American Rights Fund / 1% for the Planet.
