The Xarel.lo grapes, carefully selected from three distinct parcels, are treated with individual attention. One portion undergoes a semi carbonic maceration, another is macerated on its skins overnight, while the final portion is pressed and fermented alongside 5% Malvasia. Throughout the fermentation process, only indigenous yeasts are employed, and minimal amounts of sulfur are added when necessary.

In the year 2021, the region experienced drier conditions than usual, leading to a 40% reduction in harvest yields. However, timely rainfall just before harvest saved the day, allowing the fruits to ripen fully and resulting in exceptional quality.
