The 2022 vintage is made almost entirely from Trebbiano Toscano, usually the wine is blended with Malvasia Bianca but because of downy mildew there is very little left. For this wine only the must fiore, that is, the first pressing of the grapes, is used. After fermentation begins after a day, “dirty” racking is done, that is, with all the yeasts in suspension: “I work with yeasts because the wines increase in fatness and complexity and are more protected.” We are in a particularly cool inland area, in Loro Ciuffenna in the province of Arezzo, in an area that gives freshness and aromas and the predominantly clay soil that accentuates body and structure. The harvest was done in 15 days to seek a kind of “scaling” of maturation and have a wine both fresh and complex and aromatically evolved, in fact in the mouth it is a straight wine but with a great body, fragrant and gourmand with a bitter finish.
Notes on the Producer
Sàgona is a small mountain farm, artisan winery, and rustic tavern located in Pratomagno, in the province of Arezzo in a remote and hilly area of Tuscany. It is run by Daniele Corrotti and his partner Elena, with the help of family and friends. Danielle rents tiny plots here, for a total of 4 hectares of vines with an average age of around 40 years, all native to the area: Sangiovese for the most part, but also Malvasia Nera, Ciliegiolo, Canaiolo, Colorino, Malvasia Bianca and Trebbiano. Vinification is done in cement vats with spontaneous fermentation, without temperature control. No clarifications are made and the filtrations are very light, and the addition of sulfur is minimal.
