Harvested entirely from our two estate vineyards (Homestead Hill and Kentucky Ranch), the fruit was foot-stomped, and the juice left to soak on stems and skins for 24 hours before being whole-cluster pressed in a pneumatic bladder press. The juice was settled until fermentation began, naturally and spontaneously. Primary was concluded in a pressure tank where carbonation was naturally accomplished. Both vineyards are located on the west side of Paso Robles; one in the Adelaida District and one in the Willow Creek District. The fruit is farmed 100% organically. Total SO2: 0 Cases produced: 151

We utilize diverse varietals from exceptional Paso Robles and Monterey vineyards. Our wines are made with minimal intervention and native ferments, and the fruit, acid, and tannins are balanced naturally. We embrace the growing season's inconsistencies and harvest's unpredictability rather than producing a standardized product.
