Grapes & Style
Palomino
Palomino is the central white grape of Sherry country, especially around Jerez, Sanlúcar de Barrameda, and El Puerto de Santa María. It has often been described as neutral, but in the right context that neutrality is useful: it allows soil, flor, oxidation, and aging to speak clearly.
In the vineyard, Palomino is well adapted to the hot, dry conditions and chalky albariza soils of Andalucía. For Sherry, it’s less about overt fruit and more about producing a base wine that can become something complex through biological or oxidative aging.
In the glass, Palomino can show apple, lemon, chamomile, almond, sea salt, chalk, and bread-dough notes, depending on style. In still wines, it can be delicate and saline; under flor or in Sherry, it becomes one of the great vehicles for savory, nutty, oceanic complexity.
