Product: Still Cider Vintage: 2022 Apples: In 2022, Franconia went through some extreme heat waves and an intense drought. It did not rain for months. Our apples trees suffered, the fruit stems dried and the apples fell even before they started ripening. Fortunately for us, Felix, Christoph’s older brother, came to the rescue with a few tons of apples from his property located in Württemberg, where the season had been more forgiving. Felix’s apples are varieties perfectly suited for cider making. The resulting apple wine is a complex and interesting beverage. Less “thirst-quenching” then our 2021 version, more adapted to the table, where it’ll float along with many vegetable forward dishes. It will also pair really well with cheese. Method: The apples were delivered in mid-October, and we crushed them with the old crusher from our neighbour (older than both of us combined!). The cider then fermented to dryness in stainless steel. Aging: In stainless steel until bottling Bottled: 25th of August 2023 Soil type: N/A Sulfur: This cider had 10mg sulfur added at bottling.

We fell in love during the hot harvest of 2018 in Burgenland, and soon germinated the idea to start our own small wine project. Both of us were cooking professionally as a first career, which we eventually ditched to go into wine full time. Emily was the Wine Director of Restaurant Candide in Montreal from 2016 up to summer 2023, working remotely from her home in Europe. She is also a week-end wine writer, her work is occasionally published in magazines and web platforms in English and French. Christoph has studied Oenology and Viticulture in Neustadt (Germany), where he learned a lot of important school stuff. He worked for Clemens Busch during his studies, before moving to Austria to be part of the team at Weninger, where he spent four harvests. Our first vintage was made in Austria in 2019. During the winter of 2021, we relocated to Germany, in the beautiful region of Franken. We now collaboratively farm 4 hectares with Linda & Erhard Haßold who have welcomed us on their Weinhof am Nussbaum. They have been farming organic for more than 30 years, always striving to find better solutions respectful of the plant and the environment. We share the work outside in the vines, and the harvest when the time comes. We also devote a portion of our time farming vegetables and fruits, which end up in our vast array of preserves, tucked in our basement for the winter months or sold on the shelves of a few stores, notably Café Vue in Würzburg.
