Domaine du Chambet is all about nature: named after the small stream that runs along their vineyards, it is located on the left bank of Lake Geneva, abutting the border of Haute-Savoie, France, where sunlight bounces off the Alps and shines down on the grapes. The family has been farming crops on the estate since 1921 but the winery wasn’t established until 1987 when Marion and Gérald Fonjallaz decided to bottle the juice from the grapes they cultivated. In 2017 they handed over control to their son, winemaker Anthony Fonjallaz, who’s taken the nature-driven approach to a new level. In addition to organic faming, Anthony embraces the idea of minimal intervention winemaking. He brilliantly combines ancestral family know-how with new natural inspirations by splitting the estate’s offerings into two lines: “Les Reserves,” with more classic cuvées, and his own personal “Les Cuvées Libres”, where the originality and spontaneity dominate.

IT WAS IN 2021 THAT BENOÎT FONJALLAZ FOUNDED LABEL POMME, AN ARTISANAL CIDER MAKER WHOSE ASPIRATIONS RESEARCH FROM HIS FAMILY WINE-GROWING ROOTS, HIS REAL INTEREST IN THE FRUIT TREE, PARTICULARLY THE APPLE TREE, AND FROM HIS PASSION FOR THE WORLD OF MUSIC.
ITS INFLUENCES CONVERGE AND DEFINE THE APPLE LABEL.
WE AIM TO CREATE QUALITY, VIBRANT AND PRECISE CIDER WITH MORE OR LONG AGEING IN DIFFERENT CONTAINERS SUCH AS STAINLESS STEEL, WOOD OR SOON CLAY, DEPENDING ON THE CUVÉES AND VINTAGES.
THE APPLE, LIKE THE PEAR AND THE GRAPE, IS THE ONLY FRUIT NATURALLY STABLE AFTER FERMENTATION THANKS TO ITS BALANCED COMPOSITION AND RICH IN SUGARS, ACIDS AND TANINS, WHICH GIVES IT A SINGULAR PLACE IN THE WORLD OF FERMENTED DRINKS.
IN ORDER TO BEST RESONATE THE TYPICITY OF OUR APPLES AND OUR TERROIR, WE PRODUCE ORGANIC CIDER FERMENTED SPONTANEOUSLY FROM WILD YEASTS NATURALLY PRESENT ON THE FRUITS.
LABEL POMME IS A CIDERMAKER WHICH GROWS ITS OWN CIDER AND CHEWING FRUITS.
IN SPRING 2021, WE RENEWED THE FAMILY ORCHARD BY OVER-GRAFTING THE OLD TREES WITH DISEASE-RESISTANT VARIETIES.
THE FOLLOWING FALL, WE ALSO ESTABLISHED A HIGH-STEM ORCHARD COMPOSED OF AROUND FIFTEEN OLD VARIETIES.
IN ORDER TO RESPECT LOCAL BIODIVERSITY, HARMONY AND SUSTAINABILITY OF ECOSYSTEMS, ALL OF OUR ORCHARDS ARE BIO-SUISSE AND GRTA CERTIFIED. ALL OUR FRUITS ARE HARVESTED BY HAND.
